Thursday Edibles – Goat Cheese and Sun-Dried Tomato Pesto Bagel

Tired of the same old bagel with cream cheese? I've got a wonderful alternative for you to try out!

One of the first breakfast foods I made for Husband is this delectable recipe from Wegmans! He instantly loved it, and it remains our breakfast favorite. I really like the freshly baked honey wheat bagels from Trader Joe’s or freshly baked wheat or multi-grain bagels from your grocery store bakery, but you can use any bagels you like! This recipe takes 5 minutes.

1 bagel, split and toasted (optional)
1/2 tablespoon soft goat cheese
½ tablespoon sun-dried tomato pesto (I will post a recipe for this eventually… for now, you can purchase it in a jar at most grocery stores)
3 tablespoons sprouts (alfalfa, clover or any other kind, as desired)

Toast bagel.

Spread goat cheese on one bagel half; top with tomato pesto and sprouts. Replace top of bagel.

Enjoy! Mini-bagels are also great – simply reduce the goat cheese, pesto and sprout amounts as needed.
