Thursday Edibles – Homemade Roasted Bell Pepper Hummus

We in the jaC family absolutely love hummus! It is great to put in our sandwiches and wraps; couple it with fresh veggies for a delicious snack!

Husband modified this recipe just a bit, and it came out excellent.

16 ounces chickpeas (you can use canned or buy them dry and boil as directed)
6 ounces roasted red bell peppers
1 jalapeno, seeded, diced
1 tablespoon fresh chopped garlic
3 tablespoons chopped cilantro leaves
1 teaspoon paprika
3 tablespoons chopped onion
1 teaspoon freshly cracked black pepper
Juice of 1 fresh lime or lemon
1/4 cup extra-virgin olive oil
Salt to taste
Toasted pita bread or veggies, for serving

Mix all ingredients, except olive oil and pita bread, in food processor until pureed; then slowly add in olive oil.

Let set up for 1 hour prior to serving.

Serve with toasted pita bread or vegetables. We enjoyed it with cucumber slices, as you can see in the picture!
