Thursday Edibles - Shrimp and Grits

This is one of the easiest and quickest recipes that produces a delicious meal! They key is a lot of cheese and butter, but especially cheese. If you think you have a lot already, go ahead and use some more.

I have to make a disclaimer that all portions are approximate. I usually make this from my memory and don't measure much of anything.

1 lb jumbo shrimp, peeled and deveined (with the tails left on for more flavor)
3-4 tablespoons butter
2-3 cloves fresh garlic
1/2 fresh lemon juice
1 cup freshly grated cheese (Parmesan, Comte, Gruyere or a mix of them)
fresh parsley for garnish
salt and pepper to taste

1.  Melt butter in a frying pan.  Crush garlic and add to the butter.  Add shrimp, season with salt and pepper, and cook until pink and cooked through.  Set aside and garnish with parsley leaves.  Sprinkle with lemon juice.

2.  Cook a desired amount of grits according to the directions on the box.  It's really pretty easy and goes something like this: combine appropriate amounts of grits and water. Add salt. Bring to a boil and cook, stirring frequently, until all the water is absorbed.

3.  Now comes the fun part!  Add a lot of butter and a lot of cheese.  The more cheese, the better, if you ask me.  Stir well until the cheese has melted.

All done and ready to serve!  Easy, wasn't it?
