Thursday Edibles - Truffle Mashed Potatoes

Hello!  I know it's not Thursday, but let's just pretend it is. :)  I have the most delicious recipe to share with you.  If you like mashed potatoes and truffles, you'll love this!

Truffle Mashed Potatoes 

4 large Russet potatoes, peeled and cut into chunks
1 large garlic clove
0.25 cups half and half (or heavy cream)
6 tablespoons butter
1.5 cups shredded truffle cheese
Truffle-scented olive oil
salt and pepper to taste

Boil potatoes and garlic clove until potatoes are tender. Drain well and mash in a large bowl. Blend in half and half (or heavy cream) and 3 tablespoons butter.  Add salt and pepper to taste.

Shred the cheese and add it to the potatoes, and blend gently. Sprinkle with a bit of truffle-scented oil.

Preheat oven to 400F, transfer mixture to a baking tray and bake for 15 minutes or until the cheese melts.
