Thursday Edibles - Poppy Seed Chicken Salad Pitas

This is a great summer salad with a refreshing flavor!  It's perfect as a light lunch or dinner.  We have had it with and without pita (or any other bread).

You can find the full recipe here; the only change I make is that I buy a Rotisserie chicken and use that instead of boiling the chicken.  I really like natural dried Turkish apricots (from the bulk foods section at Whole Foods) for this recipe.  Enjoy!
